Winemaking

Process:

Grapes were harvested by hand.
Spontaneous natural fermentation took place in Egg shaped
tanks, 20% of the grapes were left as whole bunches for
fermentation.

Spontaneous fermentation with natural yeast

Aging Method:

Matured in 3rd fill 300-liter French oak
barrels for 10 months.

Aging Duration: 10 months

Think grilled meats like lamb chops with rosemary, Moroccan tagines with dried apricots and cinnamon, or roasted vegetables with smoky paprika.
