Winemaking

Process:

Grapes were harvested by hand. The best 50% of the bunches
were hand selected and whole bunch fermented in egg shaped
fermenter. Wine was left on the skins and stems for four weeks
after fermentation. The other 50 % was destemmed and pressed
using a basket press, the juice was settled overnight, racked and
fermented naturally.

Aging Method:

After wild ferment and four-week maceration the wine was
pressed and matured in two 3rd fill 225-liter French oak barrels
for 4 months. Filtered then bottled under cork to allow for
slow maturation in bottle.

Pairs wonderfully with a range of dishes that highlight freshness and texture. It complements Mediterranean cuisine like grilled fish with lemon and herbs, roasted chicken with fennel, or vegetable paella.
