Process:
The grapes are meticulously destemmed and gently crushed to preserve fruit integrity before fermentation commences in traditional open-top fermenters. During fermentation, the cap is manually punched down three times daily. Once the desired fermentation profile is achieved, the wine is pressed and transferred into oak barrels, where it begins its maturation journey, developing structure, complexity, and harmonious integration of flavors.
