Process:
Harvested at 18° Balling, the grapes undergo meticulous sorting before being whole-bunch pressed. Only the free-run juice is gently extracted, then settled and slowly fermented under temperature-controlled conditions in stainless steel fermenters. Following fermentation, the wine is bottled with a bespoke liqueur comprising sugar and yeast and sealed under crown caps, initiating the second fermentation in bottle. This traditional process yields fine, persistent bubbles and imparts vibrancy and finesse to the final wine.
