Selecting the perfect grape

Harvest season is the most decisive moment in the winemaker’s year. After months of nurturing vines, protecting fruit from pests and weather, and carefully managing growth, the question every vintner face is simple yet complex: how do you know when the grapes are ready to harvest? The answer is not as straightforward as waiting until the berries look plump or taste sweet. Ripeness in winemaking is a layered concept, shaped by science, tradition, and sometimes even the realities of logistics. Understanding these dimensions is essential for producing wines that reflect both the vineyard’s potential and the winemaker’s vision.

The first step in defining ripeness is to consider the type of wine you intend to make. Ripeness is not a universal standard, it varies depending on whether you are crafting a crisp sparkling wine, a fresh unwooded white, a bold barrel-aged Chenin Blanc, or a fortified wine such as Port.

Grapes destined for sparkling wine are harvested earlier, when acidity is high and sugar levels are lower, ensuring freshness and balance in the final product. Grapes for full-bodied reds or sweet wines, on the other hand, are left longer on the vine to accumulate sugar and develop richer, more complex flavours. Even within a single variety, harvest timing can differ significantly. A Chenin Blanc picked at 21 degrees Brix with a titratable acidity of around 7 grams per Liter will yield a lively, fresh wine. The same variety harvested later at 24 degrees Brix, with acidity dropping to 4 or 5 grams per Liter, produces a fuller, honeyed style that pairs beautifully with oak aging. In short, the definition of ripeness is inseparable from the winemaker’s stylistic goals.

Modern winemaking relies heavily on laboratory analysis to guide harvest decisions, and this is often referred to as harvesting based on analytical ripeness. The three pillars of this approach are sugar content(°B), acidity (TA), and pH. Sugar is typically measured in degrees Brix in South Africa, where each degree represents roughly 10 grams per Liter of sugar. Some winemakers use Balling, an older but nearly identical scale, while German producers often refer to the Oechsle scale (which is a beast all its own).

These measurements indicate the potential alcohol levels after fermentation, with 21 degrees Brix corresponding to about 12 percent alcohol and 24 degrees Brix yielding closer to 14 percent.

Acidity, measured as titratable acidity, provides freshness, balance, and longevity in wine. As grapes ripen, sugar levels increase while acidity decreases, and the challenge lies in finding the sweet spot where both are in harmony. Typical targets are around 8 grams per Liter for sparkling wines, 7 grams per Liter for white wines, and 6 grams per Liter for reds. While titratable acidity measures total acid, pH reflects how that acidity behaves chemically. It influences microbial stability and the effectiveness of sulphur dioxide in protecting wine. Lower pH values, around 3.0 to 3.2, are desirable for whites and sparkling wines, while reds often sit slightly higher. Together, sugar, acidity, and pH form the analytical trifecta of ripeness, and large cellars handling hundreds of vineyard blocks often rely primarily on these numbers to schedule harvests efficiently.

Numbers, however, tell only part of the story. Flavour development, or phenological ripeness, is equally important. This refers to the sensory and chemical evolution of grape flavours, tannins, and aromas. Historically, winemakers judged harvest readiness by tasting grapes in the vineyard, and even today this remains a vital practice. Modern tools such as high-performance liquid chromatography can measure specific compounds, such as methoxypyrazines in Sauvignon Blanc, which are responsible for green, herbaceous notes.

Our Chenin Blanc example shows how flavour ripeness shapes wine style. At lower sugar levels, it expresses floral and green apple notes, ideal for fresh, unoaked wines. With extended ripening, it develops dried fruit, apricot, and honey flavours that pair beautifully with the nutty complexity imparted by barrel aging. Interestingly, some seasons produce what South African winemakers call “bevange” grapes, literally “trapped grapes.” In these cases, sugar accumulation stalls, but flavour development continues, resulting in grapes that can yield surprisingly expressive wines despite modest analytical ripeness or thin and acidic wines with little flavour. Phenological ripeness reminds us that wine is not just chemistry, it is also artistry, guided by the palate and the desired sensory profile.

Perhaps the most controversial factor in harvest timing is logistical ripeness. In theory, grapes should be harvested at their analytical and phenological peak. In practice, cellar capacity, labour availability, and weather often dictate when fruit comes in. If a block of Sauvignon Blanc ripens later than the rest, it may still be harvested alongside earlier blocks to streamline operations. If rain is forecast, grapes may be picked slightly underripe to avoid rot. Labor shortages can also force compromises. I once worked with a farmer that harvested so slowly picking stretched over two weeks, meaning that to make sure all his Sauvignon Blanc grapes came in before the cellar switched to red grapes we had him start harvesting with the first Sauvignon Blanc grapes came in even though the grapes was only at 18 Brix and then the last of his trucks arriving with 26 Brix grapes. Surprisingly, blending these extremes can still produce a balanced wine. Logistical ripeness is about compromise. While not ideal, it reflects the reality that winemaking is both an art and an industry. Sometimes, “good enough” is better than losing the crop altogether.

Harvest is not just about picking fruit, it is the moment where the winemaker’s vision, the vineyard’s potential, and the realities of production converge. Whether guided by laboratory numbers, grape flavours, or logistical necessity, the decision defines the wine’s identity. A crisp sparkling wine, a fresh Sauvignon Blanc, a bold wooded Chenin, or a robust red all begin with the same question: when are the grapes ripe? The answer is never absolute, but rather a reflection of the winemaker’s craft, balancing precision with intuition. In the end, harvest timing is the winemaker’s signature, etched into every bottle.
